The Vegan Gluten Free Bread Challenge

This is the Gluten Free Bread that I have been making and have spent the past 3 years refining till it comes out of the oven crispy on the outside and soft in the middle every-time.
This bread has eggs in it and although I try to seek out free range; that is eggs from chicken that have been well treated (which in itself is quite a challenge when living in Japan where you have to know when they will be delivered to the store and which stores sell them as they sell out really quickly) I sometime use the eggs that my guests have left behind. Life is precious and to waste the eggs that some poor battery chicken has spent her days producing seems wrong, Although the earth wastes nothing.
The challenge is to try to make a bread without eggs that is just as scrumptious as this bread.
