The Best Gluten Free Olive and Rosemary Bread

This is the Gluten Free Bread that I have been making and have spent the past 3 years refining till it comes out of the oven crispy on the outside and soft in the middle every-time.

This bread has eggs in it and although I try to seek out free range; that is eggs from chicken that have been well treated (which in itself is quite a challenge when living in Japan where you have to know when they will be delivered to the store and which stores sell them as they sell out really quickly) I sometime use the eggs that my guests have left behind. Life is precious and to waste the eggs that some poor battery chicken has spent her days producing seems wrong, Although the earth wastes nothing.

The challenge is to try to make a bread without eggs that is just as scrumptious as this bread.

Flax Seeds They Say

a tablespoon for every egg you want to replace. I have had a doughy sticky bread out of this solution.   

Different treatment for Gluten Free Flour?

I'll try adding less flax seeds But what makes this bread so fluffy and light with the use of eggs and diary?

Will crushing the seeds in the Spice Grinder Work?

I soaked the seed and crushed them in my spice grinder but that's not the solution.
